Chick Pea and Brown Rice Burgers

2 Cups chickpeas
1 Cup cooked Brown Rice
1 shallot minced
1 garlic clove minces
2 Tablespoons parsley chopped
1 large egg 2 Tablespoons olive oil


Mash chickpeas and rice with a fork until a thick paste forms
Stir in shallot,garlic,parsley and season with salt and pepper
Wisk egg and stir into mixture
 Heat oil in a large skillet over medium high heat
Add patties and cook until golden brown about 4 minutes per side.

To serve spread each burger with whole grain mustard,red onion roasted red pepper and wrap in lettuce leaves.

Potato and Zucchini Hash

Ingredients
2 Tablespoons olive oil
2 russet potatoes quartered and thinly sliced
2 zucchini quartered and sliced
1 small onion
1 Tablespoon Butter
4 eggs
Salt and pepper to taste

Heat a fry pan with the olive oil,add potatoes,onion and cook stirring often for 15 minutes until potatoes are cooked and brown. Add Zuchinni during the last 7 minutes. Add salt and pepper to taste.
In a second fry pan add butter and cook the eggs until whites are brown around the edges.
Divide the hash brown mixture among 4 plates place an egg on top and serve,with toast or fruit

Nutella Cookies

No sugar needed

Ingredients
1 cup Nutella
1 egg
1 cup of flour

Mix all ingredients,drop by spoonfuls on baking sheet bake in a 350 degree oven for 6 to 8 minutes.
