Welcome October

Fall has always been my  favorite time of the year. I love the Fall colors, going to the apple orchard and picking apples to make pies. Heading to the Farmers Market to pick out pumpkins and mums  to decorate the porch. I love the smells of fall burning leaves, baking pumpkin bread, diffusing cinnamon and orange oils that make my house smell amazing. I love the cool crisp evenings, bon fires, and long walks that end with some hot cocoa. It's especially beautiful this year living on the lake as the trees are begging to turn at my happy place.

My Happy Place

Wow it's been a while since I've posted anything, and so much has changed. 
Last April we moved from the hustle and bustle of the City to the peace and quiet of Lake living. We also got a puppy. This move was the best decision we have made. Since the move I am more relaxed, haven't worn makeup and realized half the stuff I thought I had to bring with me I really didn't need. 
The house was a work in progress, and it's taken 5 months to complete most of it. There is not too much left to do, some landscaping and John's dream of a larger garage.
My stress level has dropped to zero. We take relaxing boat rides,long walks, and I couldn't be happier. I'm living the dream and am truly blessed.

Best Veggie Burger

Made these last night. I put sour cream on mine John opted for mustard.

Ingredients 
4 carrots sliced 
2 Cups chick peas
1/4 cup parsley
1egg
1/4 t each cummin,chili powder and coriander 
1/2 cup Panko bread crumbs
Olive oil

Cook carrots in water until soft drain add chick peas and mash.
Let cool add egg and other ingredients and mix well.
Form into 8 balls,cover and refrigerate for at least 30 minutes.
Heat oil in pan form balls into patties and cook 3 to 4 minutes until golden brown.Serve with sour cream.

Black Bean and Corn Nacho's

This is so easy 

Ingredients:
1 can of Black Beans
1 can of corn 
1/2 cup of Salsa
Cheddar cheese
Tortilla Chips
Sour Cream

Mix the beans,corn and salsa in a pan and heat.
Place chips on a plate add the hot bean mixture top with the cheddar and serve,with sour cream.
I serve it with a fruit salad and it's a great quick meal when your in a hurry.

Best Ever Fruit Salad

Ingredients
2 cans of pineapple chunks drained
1 jar mandarin oranges,drained
5 kiwi pealed and sliced
1 pint of blueberries
1 quart of strawberry's sliced
2 Papaya pealed and sliced in chunks or you can use canned

Wash blueberries and strawberries. Slice strawberries and kiwi,and place in a bowl add the rest of the fruit and gently mix. Cover and refrigerate until cold.

Breakfast Cookies

These aren't just for breakfast.

3 mashed ripe bananas
1/3 cup applesauce
2cups oats
1/4 cup almond milk
1/2 cup raisins
1 teaspoon vanilla 
1 teaspoon cinnamon

Bake at 350° for 12 to 15 minutes
