Black Bean and Corn Nacho's

This is so easy 

Ingredients:
1 can of Black Beans
1 can of corn 
1/2 cup of Salsa
Cheddar cheese
Tortilla Chips
Sour Cream

Mix the beans,corn and salsa in a pan and heat.
Place chips on a plate add the hot bean mixture top with the cheddar and serve,with sour cream.
I serve it with a fruit salad and it's a great quick meal when your in a hurry.

Best Ever Fruit Salad

Ingredients
2 cans of pineapple chunks drained
1 jar mandarin oranges,drained
5 kiwi pealed and sliced
1 pint of blueberries
1 quart of strawberry's sliced
2 Papaya pealed and sliced in chunks or you can use canned

Wash blueberries and strawberries. Slice strawberries and kiwi,and place in a bowl add the rest of the fruit and gently mix. Cover and refrigerate until cold.

Breakfast Cookies

These aren't just for breakfast.

3 mashed ripe bananas
1/3 cup applesauce
2cups oats
1/4 cup almond milk
1/2 cup raisins
1 teaspoon vanilla 
1 teaspoon cinnamon

Bake at 350° for 12 to 15 minutes

Easter Bark

This is a very simple easy treat to make and share for Eadter.

Ingredients
Oreo cookies (broken into pieces)
1 bag of pastel colored M&Ms
Pastel colored sprinkles
White chocolate melting bark

Line a baking sheet with parchment paper. Melt the chocolate over a pan of boiling water stirring constantly until melted. Pour on the baking sheet. Add the M&Ms,Oreo cookie pieces and sprinkles. Once hard break into bite size pieces.  Store in an air tight container.

Spinach Patty's

These are very healthy and easy.

What you need 
1 package of frozen spinach thawed and drained (make sure you squeeze out as much liquid as you can
1/2 cup cheddar cheese
1/4 cup chopped onion
1/2 cup bread crumbs
1 whole egg
2 egg whites
1/4 teaspoon garlic salt
Salt & pepper 

Mix all the ingredients in a bowl form into patty's and cook in a non stick pan sprayed with Pam 
Cook for 4 to 6 minutes until they are crisp and browned.
I served mine with a baked potato and fruit. I also served some sour cream on the side.

Potato and Zucchini Hash

Ingredients
2 Tablespoons olive oil
2 russet potatoes quartered and thinly sliced
2 zucchini quartered and sliced
1 small onion
1 Tablespoon Butter
4 eggs
Salt and pepper to taste

Heat a fry pan with the olive oil,add potatoes,onion and cook stirring often for 15 minutes until potatoes are cooked and brown. Add Zuchinni during the last 7 minutes. Add salt and pepper to taste.
In a second fry pan add butter and cook the eggs until whites are brown around the edges.
Divide the hash brown mixture among 4 plates place an egg on top and serve,with toast or fruit

Nutella Cookies

No sugar needed

Ingredients
1 cup Nutella
1 egg
1 cup of flour

Mix all ingredients,drop by spoonfuls on baking sheet bake in a 350 degree oven for 6 to 8 minutes.
Delish!!!

Stuffed Peppers

Lately I have been using my crock pot to make meals. It's easy and less time consuming. Tonight I'm making stuffed peppers. 

Ingredients
4 peppers  (I used a variety)
1 can black beans
1/3 cup frozen corn
1/2 cup salsa
1 cup pepper jack cheese
1/3 cup long grain uncooked rice
3 green onions chopped
1teaspoon cumin

Cut a thin piece off the top of the peppers,clean out the seeds and membrane. 
Mix all the other ingredients in a bowl. Stuff each pepper and place it in the crock pot.
Cook on low for 4 to 6 hours.

Stuffed Peppers

YIngredients 
4 Peppers,(I used red and Green)
Cooked brown rice
1 small onion chopped
1/2 cup grated Parmesan cheese
Mozzarella cheese

Slice the top off the peppers and clean them out, place them in a baking dish
In a medium sauté pan cook the onions. Chop the pepper tops and add them to the sauté pan. Cook until the peppers are soft about 5 minutes. Add the rice and stir add the grated Parmesean cheese.
Stuff the peppers and bake in a 375 degree oven for 30 minutes. Top the peppers with the mozzarella and bake for another 15 minutes.

I served mine with fruit.

Only 5 Ingredients

Brocolli Florettes (bite size pieces)
1 small onion diced
2 cups of sharp cheddar cheese grated
1 can carnation evaporated milk
3 cups chicken or vegetable stock
 
Sauté the onion until soft add the other ingredients and stir over med heat until cheese is melted.
That's it. Quick,easy and delish.

Creamy Garlic Mashed Potatoes

This is Alton Browns recipe,which I am going to make on Thanksgiving.

What you need
6 cloves of garlic
31/2 lbs russet potatoes
2 tsp kosher salt
16 fluid ounces 1/2and 1/2
6oz Parmesean cheese

Peel and dice potatoe,making sure all are relitividlythe same size. Place in a large saucepan,add salt and cover with water. Bring to a boil and then reduce to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
Heat the 1/2 and 1/2 and garlic in a medium saucepan over medium heat until simmering.
Remove from heat and set aside
Remove the potatoes from heat and drain off water. Mash and add garlic-cream mixture and Parmesean. Stir to combine. Let stand for 5 minutes so mixture thickens,and serve.

Acorn Squash

I love this simple recipe for acorn squash.

1 acorn squash cut in half,seeds removed
2Tablespoons butter
2 Tablespoons dark brown sugar
1/2 Teaspoon nutmeg

Place squash halves on a cookie sheet cut side up
Place 1 tablespoon butter 1 tablespoon brown sugar and 1/4 teaspoon nutmeg in each half
Bake in a pre heated 450 degree oven for 1hour

Deliscious

Grilled corn fritters

What you need 
2 cups of corn one handful of parsley 1/4 cup all-purpose flour 1/2 teaspoon baking powder one half teaspoon black pepper 1/3 cup cornmeal 1 teaspoon kosher salt vegetable oil and 1/3 cup milk 

Heat oil in a frying pan ,mix all the ingredients together,using a 1/3 cup form patties and cook the fritters on each side for about five minutes until they are brown and serve with sour cream
This dish is very healthy and very easy to make.

Spinache and Mushroom Quiche

I made this for dinner tonight and it was delishous.
1 10oz box of frozen spinache
Fresh mushrooms thinly sliced
4 large eggs
1 cup of milk
1 cup shredded mozzarella
2 oz. Feta
1 cup grated Parmesean cheese
Preheat oven to 350
Defrost spinache and drain
Spray a sauté pan with non stick spray and sauté the mushrooms
Spray a pie plate with non stick spray and cover the bottom with the spinache spread the sautéed mushrooms and sprinkle the feta on top.
In a bowl beat the 4 eggs add the Parmesean pour over the spinache mushroom mixture. 
Sprinkle the Mozzarella on top and bake for 45 minutes until it's golden brown on top and solid in the middle.

Portobello Veggie Burgers

2cups Portobello Mushrooms cubed
2cups cooked Black Beans
1 Cup Minced Brocoli or Zuchinni 
1/2 cup red onion
3 XL eggs
1/2 cup Panko bread crumbs
1Tbl Montreal steak seasoning
1 Tbl Worcestershire sauce
2Tbl minced garlic
3/4 cup grated fresh Parmesean 
Olive Oil

In a large bowl add half the beans and mash them add the mushrooms,the rest of the beans Brocoli,garlic,onion and seasoning. Mix until coated
Add the

eggs,cheese and bread crumbs and mix gently.
Set aside while you place a pan over medium heat add oil.
Once it starts to simmer dampen your hands place about 1/2 cup of the mixture in your hands and form into a patty,continue until all the mixture is used up. Cook for 3 to 5 minutes per side until golden brown and a crust has formed on the outside.

Serve with your favorite Hummus or Guacamole.

Marinated Shrimp and Pineapple

This is what we had for dinner tonight.

What you need
Shrimp
Pineapple chunks
Hawaiian Marinade (in the dressing aisle)
Skewers

Place shrimp along with marinade in a large zip-loc bag for about 30 minutes
Soak your skewers if your using wooden ones in water,this prevents them from catching on fire
Once the Shrimp is done marinating alternate the Shrimp and Pineapple on the skewer.
Place on your preheated grill on med high and cook 2 to 3 minutes until Shrimp is done.
This is a wonderful light meal. I served mine with a pasta salad.

BLT Salad

I love BLTs  but I don't need the bread,so when I saw this recipe I was excited.

What you need 
Thick sliced bacon about one pound
Romaine lettuce 2 stalks sliced into bite size pieces
Tomatoes 3 large cut into bite size pieces
Miracle whip dressing 1 cup.

Mix everything together,top with the dressing mix it in right before serving.
It is so good

Grilling Fish

Have you ever tried to grill fish only to have it fall through the grate on the grill as your cooking. Well here is a great idea. It not only keeps the fish on top of the Grill but it also adds flavor. Place slices of Lemon on the Grill and place the fish on top. It's as easy as that. Then cook as usual.
